Μαροκινό σακσούκα (shakshuka) με μανιτάρια και σπανάκι

Υλικά

1 κόκκινο κρεμμύδι, ψιλοκομμένο

2 κ.σ. ελαιόλαδο

2 μεγάλες κόκκινες ή κίτρινες πιπεριές, κομμένες σε ζάρια

2 φλιτζάνια μανιτάρια ψιλοκομμένα

4 σκελίδες σκόρδο, λιωμένες

1 κ.σ. τοματοπολτό

1 ½ κ.γ. αλεσμένο κύμινο

1/2 κ.γ. μπούκοβο

5 μεγάλες ώριμες ντομάτες (800γρ) ή 2 x 400γρ. κονσέρβες ψιλοκομμένες αποφλοιωμένες ντομάτες

3 φλιτζάνια σπανάκι baby ή κανονικό

Αλάτι και πιπέρι

4-6 ελεύθερης βοσκής αυγά

μαϊντανό ή κόλιανδρο, για το σερβίρισμα

Βήματα

Ζεσταίνετε το ελαιόλαδο σε ένα τηγάνι και μαγειρέψτε το κρεμμύδι μέχρι να μαλακώσει.

Προσθέστε τις πιπεριές και συνεχίστε για ακόμη λίγα λεπτά, μέχρι να μαλακώσουν και οι πιπεριές.

Ρίξτε και τα μανιτάρια και μαγειρέψτε για ένα λεπτό ή δύο.

Προσθέστε την πάστα ντομάτας, το αλάτι, πιπέρι, σκόρδο και το μπούκοβο και αφήστε το για περίπου 5 λεπτά ακόμα. Προσθέστε λίγο νερό αν στεγνώνει και γίνει πολύ παχύ.

Προσθέστε τις ντομάτες και το σπανάκι και αφήστε τα για 10 λεπτά ή έως ότου η σάλτσα είναι έτοιμη.

Κάντε λακουβίτσες μέσα στη σάλτσα και προσθέστε όμορφα τα αυγά, σιγομαγειρέψτε για 8 - 10 λεπτά μέχρι να ψηθούν.

Ανακατεύετε τα ασπράδια λίγο με τη σάλτσα και προσπαθήστε να μην σπάσουν οι κρόκοι. Αν έχετε καλύψτε με ένα άλλο τηγάνι ή ένα καπάκι το τηγάνι, τα αυγά θα ψηθούν πιο γρήγορα.

Βγάλτε με ένα μεγάλο κουτάλι τα αυγά με τη σάλτσα και σερβίρετε με μπόλικο ψωμί.
