Πρόκειται για ένα σκληρό τυρί ωρίμανσης που παρασκευάζεται από ένα μέρος αιγοπρόβειο και ένα μέρος αγελαδινό γάλα. Η γοητεία του βρίσκεται στην επικάλυψη από βότανα και μπαχαρικά που, πέρα από τη γευστική διαφοροποίηση, αναδεικνύουν και την αισθητική παρουσία του τυριού που αποτελείται από 4 κομμάτια διαφορετικού χρώματος, ένα για κάθε εποχή.
