Σφουγγάτο Μυτιλήνης
Υλικά:
10 αυγά
250 γρ. φέτα
200γρ κρεμμυδάκια φρέσκα
150γρ κρεμμύδι ξερό
400γρ κολοκυθάκια
20γρ μυρώνια
40γρ μαϊντανό
20γρ άνηθο
30γρ δυόσμο
Ελαιόλαδο
Αλάτι & Πιπέρι

Εκτέλεση:
Ψιλοκόβουμε το κρεμμύδι και τα φρέσκα κρεμμύδια. Τρίβουμε τα κολοκυθάκια στον χοντρό τρίφτη και τα στραγγίζουμε καλά.
Βάζουμε σε ένα τηγάνι 50γρ ελαιόλαδο και το αφήνουμε να κάψει σε μέτρια φωτιά. Ρίχνουμε τα κρεμμύδια, αλατοπιπερώνουμε και σοτάρουμε μέχρι να μαλακώσουν και να αλλάξουν χρώμα. Ρίχνουμε τα κολοκυθάκια και σοτάρουμε για 5-6 λεπτά. Αφήνουμε στην άκρη να κρυώσουν.
Σπάμε τα αυγά σε μπολ, αλατοπιπερώνουμε και τα χτυπάμε καλά. Σπάμε μέσα στα αυγά την φέτα με τα χέρια, προσθέτουμε τα ψιλοκομμένα μυρωδικά και τα σοταρισμένα κρεμμύδια & κολοκυθάκια και ανακατεύουμε καλά.
Λαδώνουμε ένα στρογγυλό πυρίμαχο σκεύος και ρίχνουμε το μείγμα των αυγών, και ανακατεύουμε το μείγμα ώστε να βγει το σφουγγάτο. Ψήνουμε σε προ θερμασμένο φούρνο στον αέρα, στους 160oC για 30-40 λεπτά.
Αφήνουμε το σφουγγάτο να κρυώσει και σερβίρουμε .
