Ο καρπός έχει ωριμάσει στο δέντρο και συλλέγεται με το χέρι. Η επεξεργασία του γίνεται την ίδια μέρα με τη συγκομιδή, αποκλειστικά με μηχανικά μέσα, και κάτω από συνθήκες χαμηλής θερμοκρασίας.
